Peach Salsa Two Ways

This recipe for peach salsa is the ultimate summer condiment. Juicy ripe peaches, herbs, and a bit of jalapeno creates a sweet and spicy salsa that’s perfect with chips, on fish or chicken, or even on a sandwich!

Quick Peach Salsa

1 C chopped, peeled peaches
1 C chopped, seeded cucumber
2/3 C salsa
2 T snipped fresh cilantro or parsleyIn a medium mixing bowl combine chopped fruit, cucumber, salsa and cilantro or parsley. Toss gently to coat. Cover and chill for up to 2 days or till serving time.

Makes about 2 cups

Fresh Peach Salsa

2 C chopped, peeled fresh peaches
1/4 C chopped sweet onion
3 T lime juice
2-3 T finely chopped, seeded fresh jalapeno
1 clove garlic, minced
1 T snipped fresh cilantro
1/2 t sugar

In a medium mixing bowl stir together peaches, onion, lime juice, peppers, garlic, cilantro and sugar. Cover and chill for 1 to 2 hours.

Makes about 2 cups.
