Add a spicy kick to your favorite dishes with this mouthwatering Spicy Corn & Jalapeno Relish. Bursting with flavors, this sweet and spicy relish is a perfect accompaniment to hot dogs, hamburgers, nachos, sandwiches, or even crackers. With one batch yielding 3/4 cup of delicious relish, you have plenty to share and savor!
1 3/4 C fresh or frozen corn kernels
2/3 C chopped red onion
6 T distilled white vinegar
1/4 C sugar
2-3 T minced fresh jalapeno chilies
1/4 t salt
In a 2- to 3-quart pan, combine corn, onion, vinegar, sugar, 2T chilies and salt. Bring to a boil over high heat, then reduce heat, cover and until onion is tender-crisp to bite, about 5 minutes.
Uncover and stir until almost all liquid has evaporated, about 5 minutes.
Taste relish; if desired, add another tablespoon chilies. Let cool, then serve; or chill airtight up to 2 days.
Makes one 3/4 cup, 8 servings
